Prevention of the Growth of Salmonella spp. and Listeria spp. in Tahini by Using Antagonistic Microorganisms

In this study, it was aimed to provide biocontrol of Salmonella spp. and Listeria contamination in tahini. For purpose, 10 different tahini samples were obtained from Kahramanmaraş market enumeration spp., total mesophilic aerobic bacteria (TMAB), yeast-mold, Staphylococcus coliform made. Antagonistic effects Lactiplantibacillus plantarum CompaniLactobacillus alimentarius strains against typhimurium monocytogenes determined. The numbers all microorganisms inoculated on the 7th, 14th, 21st 28th days, including first day, determined stored samples. enterica serovar found one sample. mean TMAB yeast-mold counts as 3.50 3.39 log cfu/g, respectively. L. showed stronger antagonistic than C. pathogens medium.
